Master Mix

This is post is for my sister-in-law and daughter, Lori.  It is an all purpose baking mix similar to Bisquick-except it cost pennies per serving...ENJOY  LADIES!


ALL PURPOSE MASTER MIX

8 cup all purpose flour (is use 4 cups white flour and 4 cups wheat)

3 ½ TBS baking powder

2 tsp salt

1 ½ cups Crisco

1 cup non-fat dry milk

4 TBS sugar

Mix all dry ingredients.  Cut shortening into mixture

I usually double this and then I have plenty of mix on hand.  Store in an airtight container.  This mix keeps well for a month or so.

BREAD MIX

3 cups Master Mix

1 cup warm water

1 egg beaten

1 envelope yeast

Mix beaten egg, water and yeast. Put in bread machine (if using)

Add master mix

Start machine

Master Mix Banana Nut Bread

¼ cup shortening

¾ cup sugar

2 eggs

2 cup Master Mix

2-3 ripe mashed bananas

½ chopped nuts

Favorite icing (if desired)

Cream sugar and shortening. Combine eggs, master mix, bananas and nuts together.  Put in greased bread pan bake 50-60

Minutes 350 degree oven.  Poor frosting on warm bread for a glazed effect.

Master Mix Pancakes

2 cup Master Mix

1 ½ milk

1 egg

1 TBSP oil

Mix all ingredients put on hot griddle.

 

Master Mix Biscuits

2 cup Master Mix

2/3 cup milk

Heat oven to 450. Combine ingredients.  Turn ingredients onto floured surface (use Master Mix) Knead dough 25 times.  Pat dough into ½ inch biscuits. Place on greased baking pan. Bake 10 minutes.

MASTER MIX MUFFINS

3 cup Master Mix

               2 TBS sugar

               1 egg beaten

               1 cup milk
Mix sugar and Master Mix.  Add beaten egg and milk.  Stir to blend-do not overmix-batter should be lumpy.  Fill muffin pans 2/3 full and bake at 425 15 minutes
